We produce delicious specialities from the Tuscan tradition, working only with vegetables and raw materials from our territory. At Fungoamiata, we love to make excellent natural products, following our traditional recipes, which we have been carrying on with passion for over 50 years. Our products preserved in oil are processed only by hand and immersed in extra virgin olive oil. The genuineness makes our delicacies suitable both for dressing salads and as an appetiser or side dish to accompany other kitchen preparations.

These spring artichokes, once cleaned, are

blanched in water, white vinegar, white wine and some aromatic herbs.
AUBERGINES IN OIL
Only the best aubergines from our land, the ones with the firmest and most compact flesh, after skilful cooking on a charcoal grill and careful dosing of herbs, end up in jars with our oil.

We select and process only the best tomatoes to obtain a unique product.

Porcini mushrooms in extra virgin olive oil
Considered to be the mushroom par excellence, after careful selection it moves on to the production stage where it is further flavoured.
MUSHROOMS in extra virgin olive oil
Plerotus ostreatus is a mushroom grown and controlled in our greenhouses. Once harvested, it is immediately processed in our kitchens, with simplicity, care and attention to obtain a product worthy of particular notes.

For this product we use field mushrooms or champignon mushrooms that we process as soon as they are harvested because they come directly from our production greenhouses.

It undergoes the same process as marinated garlic but is then grilled.

When the plant has reached the right growth, the "heart" of the garlic is collected before it becomes hard; it is selected, processed, and put in extra virgin olive oil.
MIXED STARTER
We put three different varieties of mushrooms in oil: porcini, champignon and musk mushrooms and got a unique taste for this very special starter, very tasty and beautiful to look at.

Roasted peppers in extra virgin olive oil
Carefully selected from the peppers of our land, blanched with aromatic herbs including chilli, then grilled and potted.

Only from the cabbage flower, expertly flavoured with vinegar and fresh herbs.
